Sunday Dinner

Sunday nights are a special time at our house.  We're always trying to squeeze in just a little more fun in those last few weekend hours.  Even as a kid, I can remember dreading the moment when the sun went down on Sunday night because that meant that the weekend was over.  Now that I'm an adult, I find myself even more disappointed to see the Sunday night sunset.

Sunday evenings are typically our time to reconnect and catch up with each other and I certainly don't want to miss out on family time while I'm off cooking dinner.  That is exactly how our long standing tradition of Sunday "breakfast for dinner" got started.  It was quicker for me to put together a simple breakfast meal than it was for me to get a big dinner on the table.

Sausage and Egg Pizza
2 cups flour                                      2 cups cheddar, shredded
2 ½ teaspoons baking powder         ¾ cup milk
2 teaspoons sugar                             2 Tablespoons milk
½ teaspoon salt                                 6 eggs, beaten
¼ cup butter                                      sausage or bacon

Stir together flour, baking powder, sugar and ½ teaspoon salt.

Cut in ¼ c. butter.

Add ½ c. cheese and milk.

Press dough into a 12” circle on baking sheet.

Bake 11-12 minutes at 400.

Melt 2 T. butter in skillet.  Add eggs and scramble.  Spoon eggs over crust and top with sausage or bacon and 1 ½ c. cheese.

Bake 5 minutes.

A cheesy biscuit-like crust topped with buttery scrambled eggs and salty bacon? - yes please!

Breakfast Dinner is served.

Ciao!

  2. I must have been in a hurry when I typed this recipe but your assumption was correct. The sugar is added to the crust. I went back and corrected my mistake on the blog. Thanks for catching my mistake and more importantly, thanks for reading my blog.
