Weekend Fuel


Last week was an exciting week at our house.  The highlight of the week was the purchase of a vehicle for the newly licensed driver in our family.



He was soooooo excited about his truck!  The truth is that I had ulterior motives for buying him a truck.  I needed something that could haul away clippings from the yard, muddy bikes and the occasional wet dog. 

We started the day by cleaning out the basement - a daunting task.  (I'm amazed how 4 people can generate so much trash.)  My son was anxious to drive his truck so I took full advantage of his eagerness and I filled it up on Saturday and let him drive my load to the dump.

Once the basement was clean, we moved outside.  Ben and the kids washed the porches while I tackled the pruning.  It was a gorgeous day to work outside.  I didn't get accomplished nearly what I had hoped to accomplish but I ended up with more than a truck load of clippings for my eager driver to haul away. 

With such a big agenda for the day, I knew that I had better make a big breakfast to keep everyone energized and fueled for the day.  I made a batch of Buttermilk Waffles with fresh strawberries for all of my laborers - and my driver. 


Buttermilk Waffles
1 Tablespoon sugar                        1/2 cup sour cream
2 cups flour                                    2 eggs
1/2 cup dried buttermilk                1/4 teaspoon vanilla
3/4 teaspoon salt                            1/4 cup oil
1/2 teaspoon baking powder          1 1/4 cups seltzer water









Whisk flour, sugar, buttermilk, salt and baking powder.













Stir together sour cream, eggs, vanilla and oil.















Stir seltzer into wet ingredients.



















Pour into dry ingredients and stir gently









Pour into a hot waffle iron.









 


Crispy, tangy, delicious waffles - every time.  These waffles are quick to put together and really satisfying for a Saturday morning breakfast.  Top them with fresh fruit and a dusting of powdered sugar - decadent!
