Sweet Potato Patties


I hesitated to even publish this blog post because I know that there is only a very small percentage of readers who would be even remotely interested in sweet potato patties.  To be honest, the only person that I could think of who might be curious about these vegan patties is my friend Tracy.  (This one is for you girl.)

I made these sweet potato patties for myself one weekend after I had invited some friends over for a hamburger cookout.  I really wasn't in the mood for a burger and this recipe sounded interesting so I decided to give it a try.  

Sweet Potato Patties
2 cans cannellini beans, drained
1 large sweet potato, baked, peeled and mashed (I used 3 very small potatoes instead.)
2 Tablespoons tahini
2 teaspoon agave syrup
1 teaspoon basil
1/4 cup whole wheat flour
salt and pepper
panko

Bake potato, peel.


Add drained beans to potato and mash.   Mash in basil and flour.  (I used my Cuisinart to process everything together quickly.)


Form mixture into patties.  (I used an ice cream scoop to form evenly sized patties.)


Coat in panko crumbs.


I wrapped my patties in plastic wrap and refrigerated them until I was ready to cook. 


Bake 30 minutes at 350 or fry in 1 teaspoon oil in skillet until browned on both sides.  I opted for the baking method first - just to eliminate the need for oil.  This is what they looked like after 30 minutes of baking time.









To get them a little browner, I put them in the skillet with a teaspoon of oil after they came out of the oven.






The directions say to serve these on a bun but I was trying to save on carbohydrates (so I could eat potato chips) that afternoon so I opted to eat mine without the bun.  I loaded it up with veggies - avocado, tomato, pickles, lettuce, ketchup and mustard.  It was a really good substitute for a hamburger.

Unfortunately, these didn't have the same appeal the following day.  I cooked all of the burgers at once and I had saved the leftovers in the refrigerator. (Since I was the only sweet potato eater, there were a LOT of leftovers.)  I pulled one out for the lunch the following day and reheated my patty in the microwave expecting a yummy patty but it was not the same.  The texture was a little mushy and it just sort of lot it's appeal.  I think that I will try and cook them on the grill next time alongside the hamburgers.
