Banana Peanut Butter Bites



My son ran the spartan race last month.  He did such an amazing job that I wanted to share some of the pictures with you.


He finished in the top 1% - 29th out of 5419 racers!  Pretty good race for a first timer.

How does this athlete eat to fuel himself for a race like this one?  The answer is quite simply - ALL the time!  He is a snacker.   He eats small meals but he eats really often.  (A trait he inherited from his grandmother I think.)  It is not uncommon for him to leave half of his dinner on his plate and then come back to the kitchen for a snack a half an hour later.  (Something that frustrates me both as a mother and a chef.)  As much as it aggravates me, it's that this type of eating keeps his metabolism high.

Keeping healthy snacks in the house for this snacker proves to be a challege.  He is pretty particular about the kinds of things that he eats.  It has to be fast, already prepared, usually heatlhy and easy to grab at a moments notice.  One of his favorite things is bananas but it's hard to keep ripe bananas in the fruit basket without running to the supermarket every couple of days.  I came up with these frozen peanut butter banana treats to give him another snack option.  He really likes them.

Slice bananas and arrange on a waxed paper lined baking sheet.









Put peanut butter into a pastry bag (or a ziploc bag).







Pipe peanut butter onto half of the banana slices.  (Trust me when I tell you it's easier than trying to spoon it onto the banana.)










If you like, sprinkle some granola on top of the peanut butter.



Top with another banana slice and place the tray into the freezer for at least an hour.










Once frozen, transfer the banana peanut butter bites to a Tupperware container. 







If you are like me, you may want to try them covered in chocolate.  They are REALLY good that way.  (Maybe that's why my abs don't look like his.)
