German Chocolate Cupcakes


If you love German Chocolate Cake - you need to try these German chocolate cupcakes.  Same great taste in a - hold in your hand, no need to slice, portion control sized version.  What more could you ask for?


German Chocolate Cupcakes
1 1/4 cups flour
3/4 teaspoon baking soda
3/4 cup sugar
1/2 cup butter
1 egg
1/2 teaspoon vanilla
2 ounces semisweet chocolate, melted and cooled
1/4 cup sour cream
1/2 cup whole milk








Whisk together flour, baking soda and salt.







Beat butter and sugar until light and fluffy.  Add the egg and vanilla.  


 Add melted chocolate and sour cream.

 








Add flour mixture in 3 additions, alternating with milk.





Divide batter evenly among 15 baking cups.


Bake 18 minutes at 350.  Cool on wire racks.







For the topping, combine 2 Tablespoons butter, 1/4 cup evaporated milk and 1/4 cup brown sugar in a saucepan. 













Heat until butter melts and mixture thickens slightly.

1 cup coconut






1/2 cup chopped pecans

Allow frosting to cool to room temperature.  It will thicken as it cools.  Top each cupcake with a generous dollop of frosting.
