Brownie Cups


The first rule of culinary school is - never eat anything blue.  Blue is not a color that occurs naturally and contrary to what it's name suggests, blueberries are purple and not really blue at all. As you can probably conclude, preparing food for a boy's baby shower can be quite challenging.  Don't get me wrong, I love to cater showers for baby boys but pink punches, strawberry cakes, strawberry dip and fresh watermelon make preparing food for a pink baby shower, so much easier. 

It was my daughter's idea to throw a surprise baby shower for her CLC teacher at the end of the school year.  As luck would have it, it was a girl baby shower. 


I made chocolate covered oreos with the new baby's initial, chocolate pretzels dipped in white chocolate and decorated with pink sprinkles, fresh strawberries and strawberry cream cheese dip and brownie cupcakes with white chocolate frosting and edible white pearls.

You can tint the frosting on these brownie cupcakes any color that you like really.  (Even blue)  Choose a color to coordinate with the color scheme of the party.

Tuxedo Brownie Cups
1 package brownie mix                    1/2 cup powdered sugar
2 squares white chocolate                 2 cups cool whip
2 Tablespoons milk                          1 pint strawberries
16 ounces cream cheese                   Mint sprigs

Prepare brownie mix according to package directions.  Put 1 scoop of batter into greased mini muffin tins.  (Fill 2/3 full)  Bake 14 minutes.



Cool 15 minutes in pan.  Loosen edges, cool completely.


Microwave white chocolate until smooth.


Mix cream cheese and powdered sugar.


Stir in chocolate.
 

Add vanilla and fold in cool whip.


 Pipe into cooled brownie cups. 


If you're not planning for a pink party, you can dress these brownie cups up for seasonal parties as well. 


Serve your brownies to reflect your own personal style.  Top with a dollop of ice cream or add the white chocolate frosting - these are a hit at any party.
