Lemon Squares



If you follow my blog regularly, you know that I love Meyer Lemons.  (Ok, it's an obsession really.)  I love these lemons and they are much more widely available than they used to be.  (Even Wal Mart sells Meyer Lemons.)  For those of you who are unfamiliar with the delicious fruit - a Meyer Lemon is a cross between a mandarin orange and a lemon.  It's juicy and tart and slightly sweet - in a word - delicious. 


You can see from the pictures that these lemons have a more orange hue than a true lemon.


Lemon Bars (Makes 24)
¾ cup butter                                3 eggs
1/3 cup sugar                              1 egg yolk
½ teaspoon salt                           4 Tablespoons butter, melted
½ cup oats                                  ½ cup milk
1 ¾ cup flour                              ¼ cup lemon juice
1 Tablespoon cold water            lemon zest
1 ½ cups sugar                           ½ teaspoon vanilla
1/3 cup flour                               ¼ teaspoon salt








Heat oven to 350.  Grease a 9x13 pan.  Cream ¾ c butter, 1/3 c sugar and ½ t. salt.






Add oats and 1 ¾ c flour.

 







Sprinkle water on top and crumble with hands.











Press into pan.








Bake 15 minutes.
 

Combine remaining sugar, flour, salt, eggs, and yolk.

 
Whisk in melted butter and milk.

 
Stir in lemon juice and vanilla.
 








Pour filling over crust and tilt pan to spread evenly.  Bake 22-25 minutes.







When bars are barely warm, sprinkle with  powdered sugar.  Chill for at least 1 hour and dust again with powdered sugar before slicing and serving.
