Samoa Cupcakes

Remember the Samoa cake that I made a few months ago?


I found a recipe for Samoa Cupcakes on RoyalBaker.com.  I proved that the delicious Girl Scout cookie translates well into a cake but will it translate equally well into a cupcake?
 

Samoa Cupcakes
1 cup sour cream
1 teaspoon baking soda
2 cups flour
1/2 cup cocoa powder
1 cup butter
1 cup sugar
1/2 cup brown sugar
1 teaspoon salt
2 eggs plu 2 egg yolks
1 Tablespoon vanilla

Salted Caramel Buttercream
1/2 cup sugar
2 Tablespoons water
2 Tablespoons butter
6 Tablespoons heavy cream
1/2 teaspoon kosher salt
1 cup butter
1 Tablespoon vanilla
1 1/2 cups powdered sugar

1/2 cup toasted coconut
1/4 cup milk chocolate








In bowl, mix sour cream and baking soda.















Combine flour and cocoa.








Beat butter and both sugars until light and fluffy.


Add in eggs, yolks and vanilla.










Fold in dry ingredients, alternating with sour cream.










Scoop into muffin cups.







Bake 20 minutes a 350.


Cool completely.


Frost cupcakes with salted caramel buttercream.


Drizzle with melted milk chocolate.


Sprinkle with toasted coconut.


To answer my own question - yes, the samoa cookie does make a delicious cupcake. The best part is, you don't have to wait for Girl Scout cookie season to enjoy this treat.  You can make a batch today.
