Tomato Salad



Summer vegetable season is at its peak!  You just can't beat fresh from the vine tomatoes and crisp cucumbers.  I turned my summer favorites into a simple summer salad and drizzled it with a homemade buttermilk dressing.  I think I could eat this every day this summer.

Tomato Salad 
1/4 cup buttermilk
3 Tablespoons mayonnaise
2 Tablespoons fresh parsley
1 Tablespoon minced onion
1 teaspoon fresh thyme
1/4 teaspoon pepper
1/8 teaspoon salt
1 clove garlic
1/2 cup yellow tomatoes
1/2 cup grape tomatoes
1 cucumber, peeled and sliced
1/4 cup kalamata olives
1/2 avocado, sliced







Combine ingredients in a small bowl.  Whisk together. 





Combine tomatoes in a bowl.


Add cucumber, olives and avocado.


Drizzle dressing over vegetables.


This is a salad that actually TASTES like summer.  It really is delicious and the dressing could be poured over any salad.  If you are lucky enough to have a garden full of summer vegetables, you need to try this summer salad.
