I love a great veggie pizza. A thin whole wheat crust loaded with chunks of roasted vegetables and a hint of Parmesan cheese might just be a perfect meal. I came up with my own portable version of the classic veggie pizza last month so that I could eat it during halftime of a soccer game.
Roasted Vegetable Calzone
1 recipe whole wheat pizza dough
1 small eggplant
1 medium zucchini
1 large red pepper
1 cup baby bella mushrooms
1/4 cup sliced onion
2 Tablespoons olive oil
1 teaspoon fresh Parmesan cheese
salt and pepper
I started with all of my favorite veggies.
Peel and slice all of the vegetables into bite sized pieces.
Toss with oil and spread onto a baking sheet.
Bake 15 minutes at 400.
Roll whole wheat pizza dough into an oval.
Top with roasted vegetables and grated Parmesan cheese.
Fold dough over vegetables and seal edges.
Bake 20 minutes at 400.
Portable veggie pizza - yes. please.
