Pumpkin Butter Filled Cookies



Last Sunday, my daughter and I turned the kitchen into a regular cookie factory.  We made 7 different kinds of cookies in one afternoon!  I had all of the ingredients measured out and sorted on the kitchen island which made dough making go pretty quickly.  (To be perfectly honest, she did most of the work while I ran around taking pictures.) 

We spent night before cookie production, browsing through cookie cookbooks and recipes.  I came up with a couple that I wanted to try and my daughter chose a few recipes that looked interesting to her as well.  One of the recipes that she chose was something that I had never made before - a filled sugar cookie.  As luck would have it, we had been to Williams Sonoma that very afternoon and I had splurged on a jar of pecan pumpkin butter for myself.  It was a match made in heaven - a new jar of pecan pumpkin butter and a cookie that needed a filling. 


Pumpkin Butter Filled Cookies
1/2 cup shortening
1 cup sugar
2 eggs
1 teaspoon vanilla
2 1/2 cups flour
1/4 teaspoon baking soda
1/2 teaspoon salt
pumpkin butter for filling

Mix shortening, sugar and eggs.  Stir in vanilla.


Stir in dry ingredients.


Roll dough to 1/8 inch thick.


 
Cut with cookie cutter.


Place cookies on silpat lined baking sheet.


Spoon a teaspoon of pumpkin butter filling in center of each cookie.

 
Top with another cookie and press seams to seal.


Bake 10 minutes at 400.

 
Frost. 


We made lots of memories in the kitchen that afternoon - including my daughters first taste of unsweetened chocolate!  (She wasn't impressed.)  The cookies were wonderful but spending the day in the kitchen with my daughter was even sweeter than the cookies.

Pumpkin Dip


Don't throw away your Halloween pumpkin yet - turn it into a creative container to hold your dip instead.  I served this pumpkin dip inside of a hallowed out pumpkin at my Halloween party yesterday.  This recipe was posted on pinterest by allreicpes.com.  It was a big hit at my party and for those of you who requested the recipe - here it is.

Pumpkin Dip

Fold together 1 (8 oz) container of cool whip, 1 (3 ounce) box instant vanilla pudding, 1 cup pumpkin and 1 teaspoon pumpkin pie spice.


My dip still had some white streaks - better to undermix than overmix this dip.  


Serve dip inside of a hollowed out pumpkin.











I served cinnamon and honey graham sticks alongside the dip - for dipping of course. 

It would also be good with apple slices or fresh strawberries.







You could certainly use this pumpkin container for any kind of dip that you like.  If you don't want your dip to taste like pumpkin, cut the opening so that you can fit a small bowl inside of the pumpkin.  This would be a great, eye-catching way to serve vegetable dip and fresh veggies.

Halloween Party

Even though it seems a little anti-climatic, today's blog features the highlights from last night's Halloween festivities at my house.  (My way of hanging on to October as long as I can.)

The evening started with the neighbors gathering for a chili dinner before the trick or treaters started to ring on doorbells.  Our dining room table was filled with salad, pumpkin rolls and of course, treats! 


I put pots of steaming hot chili on the stove.  There was Italian chili, White Chicken Chili, Red Chicken Chili, Texas Chili and Vegetarian Chili.

I also put together an Olive Garden Salad.



There were baskets of freshly baked breads.  Pumpkin rolls and foccacia bread seemed appropriate for our Halloween chili feast. (Pumpkin roll recipe will be on the blog this weekend.)


An idea stolen from pinterest - a pumpkin dip served inside of a pumpkin.


Now that my kids are older, I can no longer raid their trick or treat bags without going unnoticed.  (Darn)  Since most of the adults at our Halloween supper were in a similar situation, I decided to provide some "treats" for those of us who would not be trick or treating.  My menu featured:

After dinner, everyone hit the streets with bellies full of warm chili and a few sweet treats.  My strategy was to fill the kids up with big bowl of chili so they wouldn't be able to eat as much candy.  (I don't think it really worked out that way.)
