I had a friend who has been telling me about the Engine 2 diet and it has taken me months to actually get on the website and figure out what it was all about. I won't go into the specifics about the diet or how it originated - I'll let you navigate specifics on the website for yourself. I will tell you however, that there are some great "plant-strong" recipes on the website and they are worth checking out. I made a version of the Blueberry Dumpster Fire Cobbler recently and even though it didn't turn out quite like I had imagined, it was a nice treat. I am going to give you my version of the recipe. If you want the original cobbler recipe, you will have to check out the Engine 2 website.
Blueberry Dumpster Fire Cake
Preheat over to 350 degrees.
Ingredients:
2/3 cup whole wheat pastry flour
1½ teaspoons baking powder
1 tablespoon vanilla
2/3 cup milk substitute
3 tablespoons agave nectar
1 cup blueberries
Instructions:
Combine flour and baking powder in a small bowl.
Combine vanilla, milk substitute, and agave nectar or maple syrup in a measuring cup.
Add contents of measuring cup to dry ingredients and mix until smooth. The batter will be runny.
Pour the batter into a non-stick 6-inch square pan.
Sprinkle the blueberries over the batter.

Bake for 45 minutes or until browned.
Cool on wire rack.
Cut into 4 squares to serve.
This little cake was not very sweet but really highlighted the flavor of the blueberries. It was simple and easy to put together and a little 6 inch cake is just the right size. Be sure to check out the Engine 2 website for more information and some great recipes.
