Buckeye Bars



The kids and I spent last week in Ohio so it only seems fitting that I post a recipe for Buckeye Bars to commemorate our trip.  (The buckeye tree is the state tree of Ohio.)

Buckeye Bars
1/2 cup butter
3/4 cup creamy peanut butter
3/4 cup crushed vanilla wafers
2 cup powdered sugar
8 ounces frozen cool whip topping
3 ounces semisweet chocolate

Cream butter and peanut butter until well blended.  This is such a cool picture because the mixture was all one color.  The shadows made it look like it was half chocolate and half peanut butter though.  Super cool photo.  


 






 Mix in vanilla wafer crumbs.







Gradually add powdered sugar.

 

Press mixture into a foil lined 8 inch square baking pan.


Combine frozen cool whip and 3 ounces of semisweet chocolate.








Melt in the microwave for 1 minute.  Stir until melted.






Pour over bottom layer.  Refrigerate for at least 2 hours.


Cut into squares.  In retrospect, it might have been easier to freeze the bars slightly before cutting.





As for our Ohio vacation.  We all had a fabulous time.  These pictures say it all.




Now that is what summer is all about!
