Confetti Cupcakes

I baked a batch of confetti cupcakes to take to a birthday party a last month.   Believe it or not, that was my very first batch of confetti cupcakes.  I actually really liked the idea of baking sprinkles into a cupcake.   I can't take the credit though - it was the birthday girl's idea. 

I left the cupcakes plain and took frosting bags and sprinkles with me so the party guests could make their own cupcake creations. 

For those of you who have never baked confetti cupcakes before, like me, a confetti cupcake is simply a vanilla cupcake with sprinkles stirred into the batter just before baking.  The result is a colorful and surprisingly yummy cupcake.   You can check out the step by step instructions for vanilla cupcakes on my vanilla cupcake blog post.  (Just remember to stir in some sprinkles just before before you scoop the batter into the muffin pans.)

Confetti Cupcakes
1 1/2 cups self-rising flour
1 1/4 cups all-purpose flour
1 cup (2 sticks) unsalted butter, softened
2 cups sugar
4 large eggs, at room temperature
1 cup milk
1 teaspoon vanilla extract
1/4 cup sprinkles

Preheat oven to 350 degrees F.
Line 2 (1/2 cup-12 capacity) muffin tins with cupcake papers.
In a small bowl, combine the flours. Set aside.
In a large bowl, on the medium speed of an electric mixer, cream the butter until smooth.  Add the sugar gradually and beat until fluffy, about 3 minutes.  Add the eggs, 1 at a time, beating well after each addition.  Add the dry ingredients in 3 parts, alternating with the milk and vanilla.  With each addition, beat until the ingredients are incorporated but do not over beat. Using a rubber spatula, scrape down the batter in the bowl to make sure the ingredients are well blended. Stir in sprinkles.

Carefully spoon the batter into the cupcake liners, filling them about 3/4 full.

Bake 18 minutes at 350.  Cool on wire racks.

These are my cupcakes packed up in the box and ready to be delivered to the party.

It took a little practice for the girls to get the hang of the frosting bags but they did a fine job.

And of course...it wouldn't be a birthday cupcake without sprinkles!!!
