Fresh Salsa


I dedicated my entire garden this year to watermelon so I didn't plant any tomatoes or peppers.  I love growing watermelon but I've missed having the fresh vegetables growing in my yard.  Luckily, I have wonderful neighbors who shared the tomatoes from their gardens with me this year.  One of the things that I love to do with the fresh-from-the-garden veggies is turn them into fresh salsa.

I didn't use a recipe for my salsa and I made a few mistakes along the way - it's a work in progress.

I chopped up some fresh tomatoes, garlic, cilantro, bell peppers and a Serrano pepper.   I also squeezed in 1/2 lime and sprinkled the mixture with a pinch of salt.


I let this mixture sit in the refrigerator overnight to let the flavors meld.  When I took it out of the refrigerator the following day, I tasted it and decided it might be better if I pureed it in the blender.  If I had planned to put it in the blender, I never would have taken the time to painstakingly chop the vegetables so precisely.  I would have put it all in the food processor and saved myself about 30 minutes.  (hindsight is always 20/20)


The salsa was definitely better the second day and I preferred it pureed to the chunky, pico de gallo style.  I took some to the pool and let some friends sample it and the consensus was that it need a little sugar and a little more salt.  It was good but it still tasted like something was missing - sugar.  I think I'll make another batch soon with a little sugar and see how it turns out.  I'll keep you posted.

  1. This is one of my favorite things to make in the summer with my tomatoes and jalapeno peppers. Last summer my jalapeno plant was the most prolific pepper plant of all! So lots of salsa and frozen jalapenos for this year. I too experimented, and found I liked to put in a couple of dashes of liquid smoke. I tried adding the adobo but found I liked the liquid smoke better. Thanks for this post!
