Kickin' Oatmeal Cookies



My daughter's soccer team played two games last night and after the first game the girls were ready for some rest and nourishment.  What could I make to feed a group of girls who give it all they've got on the soccer field?  Cookies of course.






I loaded up these cookies with ingredients to give the team energy and power for their next game.  (oats, nuts and chocolate)








Chocolate Chunk Oatmeal Cookies with Pecans and Dried Cherries
1 ¼ cups flour                                       1 cup dried cherries  (I left these out)
¾ teaspoon baking powder                  4 ounces chocolate chunks
½ teaspoon baking soda                       12 Tablespoons butter
½ teaspoon salt                                     1 ½ cups brown sugar
1 ¼ cups oats                                        1 egg
1 cup pecans, chopped                          1 teaspoon vanilla













I like to gather up all of my ingredients before I start putting the cookies together.








Cream butter and sugar in mixer.  Add egg and vanilla.







With mixer running, add flour mixture and then oats, pecans and chocolate.






 
Scoop onto silpat with a large scoop.


Bake 12 minutes.

Whisk together dry ingredients.  Stir together oats, pecans, cherries and chocolate.  Cream butter and sugar in mixer.  Add egg and vanilla.  With mixer running, add flour mixture and then oat mixture.  Scoop onto silpat with a large scoop and bake 12 minutes.  Rotate sheets and bake another 8 minutes.
