Healthy Banana Crunch Muffins



Does anyone else have a problem getting their family to eat bananas once they start to get brown spots?  I'm usually left with one or two spotted bananas that don't get eaten and I somehow can't escape the feeling that it is my job to make sure that they do not go to waste.  I've used up these perfectly good bananas in banana pound cake,

 
banana chocolate chip muffins


banana biscotti


frozen bananas


banana pecan coconut muffins


banana cupcakes


and even banana smoothies.


I was flipping through my recipe binder one day last week and I came across this recipe for banana crunch muffins that I pulled out of a 2007 Family Fun magazine.  I've never made the muffins before but with 2 very ripe bananas staring me in the face, I figured it was the perfect opportunity to give them a try.  These muffins were loaded with lots of healthy ingredients and I downsized them into mini muffins but you could also make 12 regular size muffins out of the batter. 

Banana Crunch Muffins
1 cup whole wheat flour
3/4 cup all purpose flour
1 cup wheat bran
2/3 cup brown sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon salt
2 eggs
2 ripe bananas
1/4 cup canola oil
1 1/2 teaspoons vanilla
1/2 cup mini chocolate chips
1 cup granola








Whisk together dry ingredients.
















Whisk together eggs, brown sugar, bananas, oil and vanilla.



















Add to dry ingredients.  Fold in chocolate chips.








Spoon batter into greased mini muffin tins.


Top with a spoonful of granola.  (I used my homemade granola.)

 

Bake 10 minutes at 400. 


These muffins were really good.  (and relatively healthy too.)


It didn't take long for this plate of muffins to disappear.

  1. These do look healthy and I like the flavor combo! The best thing about grains is that they keep you full for hours. Also, thanks for all the links to the banana creations, no reason for any bananas to go to waste. Have a great day!

  3. Sorry Jess. I accidentally included the word "buttermilk" in the directions but there isn't any buttermilk in the recipe. I fixed the recipe on the blog so it is written correctly now. Thanks for catching my mistake and good luck.

  6. Sarahmary So sorry that I forgot to include the brown sugar in the ingredient list. I must have been in a hurry when I typed this recipe. I went back and fixed the recipe so it's written correctly now. I hope your muffins turned out wonderfully. Thanks for reading my blog.
