Chocolate Peppermint Cookies



Merry Christmas Eve friends.  I can hardly believe that it's Christmas Eve already.  I still have lots of things on my to-do list to get ready for tomorrow.   No matter how busy things get, we will still carry on the tradition of baking cookies for Santa though.  Even though my children are 14 and 16 now, we still leave a plate of cookies for Santa every year.  (Santa has even been know to make specific cookie requests from time to time.)  This year Santa will be getting some chocolate peppermint cookies - a recipe that I found in an old Betty Crocker cookbook.


Chocolate Peppermint Cookies
1/2 cup shortening
1/2 cup sugar
1 egg
3 Tablespoons milk
2 ounces unsweetened chocolate, melted and cooled
1 3/4 cup flour
1 teaspoon salt
1/2 teaspoon baking powder

Filling
3 Tablespoons cream cheese
1/4 teaspoon peppermint extract
2 cups powdered sugar

Mix shortening, sugar and egg.

 
Blend in milk and cooled chocolate.
 

Combine flour, salt and baking powder.  Stir into mixture.

 









Mold into a 2" log.
















Wrap in plastic wrap and refrigerate several hours.











Heat oven to 400.  Slice dough into 1/8" thick slices.  Bake on silpat lined baking sheets for 1- minutes.  Cool.  Combine filling ingredients in mixer.
 
 
Place 2 cookies together with filling inside.  (I piped my filling inside the cookie with a pastry bag and a 1M wilton pastry tip to give it a little decorative flair.)



Don't forget to leave a glass of milk for Santa next to his plate of chocolate peppermint cookies.  I think he's going to like these cookies.  Wouldn't you?
