Roasted Red Pepper Hummus
I like to make hummus and believe me when I tell you that I take some serious criticism for my love of hummus. In spite of my critics, I'm not backing down from hummus making and I'm introducing a brand new hummus recipe. (This one's for you Mike.)
Spicy Roasted Red Pepper Hummus
1/4 cup tahini
3 Tablespoons olive oil
1/4 cup water
2 Tablespoons lemon juice
1/4 cup roasted red pepper
1 clove garlic
1 can chickpeas
salt, cumin, paprika and cayenne
Process chickpeas, garlic and spices in food processor.
Add water to lemon juice and add to food processor while running.
Whisk together tahini and oil. Add to food processor while running.
Add red pepper.
Refrigerate at least 30 minutes to allow the flavors to meld.
This recipe is super easy. If you don't have a food processor, you can make it in a blender just as easily. I think you're going to like it.
