Race/Game Day Fuel
Our Saturday started out with another 5K for my son. He did a great job and shaved even more seconds off of his time from last weekend's race. He finished in 20:34!
My daughter also had a soccer game yesterday. She scored 4 (yes 4) goals in her game!
We were ever supportive fans of course.
To keep our energy up for the race and the game, I made a batch of homemade granola bars. I found this recipe on "For the Love of Cooking" blog and I adapted it to use the ingredients that I had on hand.
I don't know who came up with the idea of putting pistachios in a granola bar but I must say - genius.
Sweet and Salty Granola Bars
1 cup oats
1/2 cup pistachios
2 Tablespoons sunflower seeds
2 Tablespoons pumpkin seeds
1/2 cup dried craisins
2 Tablespoons butter
1/3 cup honey
2 Tablespoons brown sugar
1 teaspoon vanilla
Place oats on a baking sheet and bake 6-7 minutes or until golden brown. Pour oats into a bowl and add pistachios, sunflower seeds, pumpkin seeds and craisins. Place butter, honey and brown sugar in saucepan. Bring to a boil and boil 30 seconds. Stir in vanilla. Pour over nut mixture. Stir to coat. Pour mixture into a greased 8” square baking pan. Press into pan evenly. Bake 20 minutes. Remove from oven and cool completely. Cut into squares or bars.

I accidentally left out the oven temperature for these yummy granola bars. Toast the oats for 6 minutes at 350 and bake the granola bars for 20 minutes at 350.
