What do I do with the leftover tostada toppings? Put them in a wrap and eat it for lunch of course. Leftovers don't have to mean reheating the dinner that you had the night before. It's easy to turn leftovers like these into a whole new meal.
I reheated the beans and the chicken from our tostada dinner and spread them on a whole wheat tortilla. I sprinkled on some lettuce, olives and salsa and then rolled it up into a wrap.
It was really such a quick lunch because everything was already cut up and ready to eat. I am not sure if this qualifies as a burrito but it was mighty good.
